My New Year Resolutions

New Year's resolutions:
 

1.   I am going to eat better: My dietary habits have not changed since I was 8. Sure, instead of a Butterfinger, I will go for a, say, a Cliff Bar, but it is basically the same sugar crap -- but not as tasty. I skip meals (usually breakfast), snack A LOT, drink Diet Dr. Pepper and like to eat right before I go to bed.  I also eat out too much. It's expensive and not as healthy as eating in, they say. But... I have kitchen phobia. I don't cook, and think if I did, I would be terrible, and no one would want to be my dinner date. This is all gonna change. Maybe I will by a cookbook. Do you guys have any good easy recipes for special needs cooks?

2.   I am going to get more sleep: I average 6 hours. I like to stay up late and read. It's my no worry peaceful time. The problem is that I like to get up early. The morning is also my no worry peaceful time. The  bigger problem is that the rest of the day sucks; I am tired, spacey and cranky. Plus, the crystal meth is just not as fun as it used to be.

3.   Better work habits: More time with pen and paper and less time writing on my computer. When I start on my computer, I say to myself, "oh, before I get to songwriting, why don't I check my mail, then go on a couple news sites, then a couple of blogs, then go on Wikipedia to read up on, for example, who are famous Scientologists."  Before I know it, two hours have passed and I am too tired to write a song. Plus, I didn't get enough sleep.

4.   Be brave and face the DMV: I have a Denver driver's license and have not lived there since 1987. It's part laziness, but mostly fear of having to take the test again, especially the driver's one. I don't know why it frightens me so, but it does. So, I made an appointment for next week at the Hollywood DMV. Wish me luck.

5.   Finally put out my next CD: I have been holding out for too long and have been a bit tentative. Will it be as good as my last one? Will I be heartbroken again? My last two CDs (which I am very proud of) were on two labels that went bankrupt. Sure, a lot of folks heard them: I toured tons and did what I could do on my own, but they were never properly promoted and marketed. I will be recording it in February -- yikes!

6.   Be a better person: I will try to be less self involved, more active in the community (maybe feed the homeless with my new recipes), be more tolerant of people with different political views (hmm, that's a tough one), and live life with less fear and with more love and adventure.

Look for a book called "Help! My Apartment has a Kitchen". Tells you everything you need to know how to cook very basically and explains things like you're two and a half. Not too unhealthy or exotic, just plain and simple and tells you everything you need to know before you start to experiment.

I have the below lemon garlic chicken with minute rice. It is super easy and I think you could even cook this on your hot plate, Jilly Sue. (If you can find it under the pizza boxes and crystal meth.)

15 Minute Garlic Lemon Chicken


4 boneless skinless chicken breasts
4 teaspoon flour
salt and pepper
2 teaspoons oil
1/2 cup chicken broth
1 teaspoon minced garlic
2 teaspoons lemon juice
1 teaspoon butter

Flatten chicken slightly. Dust with flour. Salt and pepper chicken.

Fry in hot oil 5 minutes each side. Remove chicken from pan.

To pan add broth, garlic, lemon juice and butter. Cook 2 minutes. Pour over chicken.

My partner felt intimidated in the kitchen. Several years ago she found herself out of work (actually, I encouraged her to quit and try something new). She came to me one night and asked me if I thought that she should take a cooking class that she was interested in. I grabbed my checkbook and paid $300 or so for the 16 weeks of classes. She took more later and with the new job paid for them on her own. The classes were held in private residences and covered basics as well as advanced stuff. Great investment. We now share the kitchen more often than not. I'd also recommend a book on cooking for two or small groups. It's always helpful to find recipes for one or two to motivate you. God, that rhymed!

Pasta dishes? Seriously try a tuna casserole. It's easy and, if you're feeling up to it, then you can make your own sauce instead of the Campbell's soup one and flavor it with thyme or rosemary. I make it fairly often as my partner and friends request it. Another:

Creamy Artichoke Pasta Sauce
1 16 ounce jar marinated artichoke hearts
2 tspns. olive oil
1 large onion, sliced
2 cloves garlic minced
2 cups kale or spinach, finely chopped
2 tspns. dried basil or 2 tablespoons fresh basil, chopped
2 tomatoes, chopped or 1 red bell pepper seeded and chopped.
1/2 cup cottage cheese
1/2 cup ricotta cheese
salt and pepper to taste
1/2 lb. pasta, cooked and drained
Grated Parmesan cheese to taste

1) Drain the artichoke hearts. Add olive oil to a frying pan. Saute onions in oil for a few minutes until just softening. Add garlic and kale (or spinach) and saute for 5 minutes.
2) Meanwhile, chop artichoke hearts into bite-size pieces. Add pieces to frying pan with onion and kale and saute for a few more minutes (until onion is translucent).
3) Add basil and saute a minute or 2 to blend. Stir in tomatoes, cottage cheese, and ricotta and heat through. Do not boil. Add salt and pepper, pour over pasta and top with grated cheese. Serve with crusty bread and glass of wine.

Penne with Salmon, Arugula, and Chives


1 pound skinless salmon fillet
8 ounces penne
1 bay leaf
1/4 cup pine nuts
2 tablespoons olive oil
1 tablespoon lemon juice
1/2 teaspoon kosher salt
3 cups arugula
1/4 cup chopped fresh chives

Fill a saucepan with enough water to cover the salmon. Add bay leaf and simmer until just cooked through, 8 to 10 minutes; remove and flake. Meanwhile, cook penne according to the package directions. In a large skillet, toast pine nuts over low heat until golden, 3 minutes; remove from pan. In the same skillet, heat olive oil.

Add the penne, salmon, lemon juice, and kosher salt and cook until heated through, 2 minutes. Stir in arugula and fresh chives.


I'm also big on curried rices. Simple and spicy.

Hm, you could probably make the above even easier by using smoked salmon and just flaking it off. Smoked salmon is also pretty good in potato salad or with asparagus that's been sauted in sesame oil and stirred with either rice or pasta.

Try spaghetti carbonara without the bacon! My favorite pasta dish! My husband's cousin's wife from Italy taught me how to make it.

While you are boiling your noodles according to the package directions....

In a large bowl, beat 3 or 4 eggs until they thicken a little, add enough shredded or grated parmesan cheese to make it gloopy, like a paste. stir in 2 Tablespoons of sour cream and some salt and pepper. Add a little nutmeg.

Drain the noodles. While they are really hot, toss them in the egg mixture. Some people like to put it in a pot and cook it some more but in Italy they don't!

For your carnivore friends you can add chopped bacon but I never do!

It's really easy! You can add red pepper or cayenne if you like it spicy!

I make killer hummus if you want that recipe too!

Jill, your T-shirts are so beloved (My bush would make a better President). With an eagerly awaited CD coming out, you might come up with slogans for a T-shirt and have your fans vote on the one they'd like to wear. Or you could have a contest where fans come up with T-shirt designs and have people vote on the best one.

This is from an older song, but I just thought it would be funny to see, "Back on my medication" happily displayed on the front of a T-shirt. It could start a lot of conversations.
